Miso-Glazed Wagyu Burger with Spicy Mayo and Caramelized Onions

Ingredients:

  • 1 pound wagyu beef
  • 1 tablespoon miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon mirin
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 2 tablespoons mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon rice vinegar
  • 4 hamburger buns
  • 4 slices of sharp cheddar cheese
  • 1 cup arugula
  • 1 small red onion, sliced thin
  • 2 tablespoons butter
  • Salt and pepper

Instructions:

  1. In a large mixing bowl, mix together the wagyu beef, miso paste, soy sauce, brown sugar, mirin, grated ginger, and minced garlic until just combined. Divide the mixture into four equal portions and form into patties.
  2. Heat a cast-iron skillet or grill over medium-high heat. Season the patties with salt and pepper and cook for about 3-4 minutes on each side or until your desired doneness is reached.
  3. While the burgers are cooking, make the spicy mayo by mixing together the mayonnaise, Sriracha sauce, and rice vinegar in a small bowl.
  4. In another skillet, melt the butter over medium heat and add the sliced red onions. Cook for about 5-7 minutes, stirring occasionally, until the onions are caramelized.
  5. Toast the hamburger buns until lightly browned.
  6. To assemble the burgers, spread the spicy mayo on the bottom half of each bun. Add a layer of arugula, then the wagyu patty, and a slice of sharp cheddar cheese. Top with the caramelized red onions and the other half of the bun.
  7. Serve and enjoy your unique, delicious grass-fed wagyu burger!
